The bug. Villagers that have been infected by a zombie can despawn, even if they have been traded with. This makes it very difficult to rescue villagers after they have been infected, as the player may not move further than 128 blocks away from the infected zombie villager to gather all supplies needed to cure it.
My idea is that mojang either adds a way to guarantee the villager being infected, or makes it 100% infection rate across all modes. Do villagers despawn? I captured two zombie villagers, cured them and got them 3 beds inside a "breeding chamber" so that they won't escape. But I can't find them anywhere now as if they disappeared out of thin air. Was I supposed to but a work bench for them to keep them from despawning? (I'm playing in Java Edition)

On bedrock, you just need to cure one zombie villager and everyone within 16 blocks in each direction will drop prices. I have a villager trapped in the middle of my trading hall on a piston. When I want cheap prices, I drop him down to a waiting zombie, then fire him back up to heal him. It looks like a roman colosseum.
The villagers all had beds and doors and such to keep them safe. They even had iron golems and cats that spawned in on their own. I spent about 3 in-game days building a fishery by a nearby river to be the career spot for fishermen villagers, and then when I went back to the center of my custom town, it's a ghost town.

I heard if I find a zombie and get it to pick up an item, then it won't despawn however I spent a long time dropping items while they chased me with no luck. This mod lets you either change the "1 in 50" chance to something like a "1 in 5" or even a "1 in 1" chance, and optionally to reverse the check (so, say, only 1 in 50 villages are not zombie villages).
